1 bag tortilla chips
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/2 cup cooked sausage, crumbled
1/2 cup diced tomatoes
1/4 cup sliced green onions
1/4 cup sliced jalapeños (optional)
1/4 cup chopped cilantro
Salsa, for serving
Sour cream, for serving
Guacamole, for serving
Instructions:
1. Prepare the Eggs:
– In a bowl, whisk together the eggs, milk, salt, and pepper.
– Heat a non-stick skillet over medium heat and melt the butter.
– Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through. Remove from heat and set aside.
2. Assemble the Nachos:
– Preheat your oven to 375°F (190°C).
– Spread the tortilla chips evenly on a large baking sheet or oven-safe platter.
– Sprinkle half of the shredded cheddar cheese over the chips.
– Evenly distribute the scrambled eggs over the chips.
– Sprinkle the crumbled bacon and sausage over the eggs.
– Add the remaining shredded cheese on top.
3. Bake the Nachos:
– Place the baking sheet in the preheated oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.
4. Add Toppings:
– Remove the nachos from the oven and top with diced tomatoes, sliced green onions, jalapeños (if using), and chopped cilantro.
5. Serve:
– Serve the breakfast nachos hot, with salsa, sour cream, and guacamole on the side.
