Bang Bang Chicken Kebabs

Ingredients 

  • 2 pounds of boneless, skinless chicken breasts (cut into cubes)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Wooden or metal skewers

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for heat level)
  • 1 tablespoon honey
  • 1 teaspoon lime juice

How to Make Bang Bang Chicken Kebabs

1. Prepare the Chicken Marinade

In a large bowl, combine olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper. Add the cubed chicken and toss to coat evenly. Let the chicken marinate for at least 30 minutes to absorb all the flavors. For best results, marinate for 2-3 hours in the fridge.

2. Soak Wooden Skewers (if using)

If you’re using wooden skewers, soak them in water for 20-30 minutes before grilling to prevent them from burning.

3. Make the Bang Bang Sauce

In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Adjust the sriracha based on how spicy you want your sauce. Set aside in the fridge until you’re ready to serve.

4. Skewer the Chicken

Thread the marinated chicken cubes onto the skewers. Make sure not to overcrowd the skewers so the chicken cooks evenly.

5. Grill or Bake the Chicken

  • For Grilling: Preheat your grill to medium-high heat. Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has a slight char on the outside.
  • For Baking: Preheat your oven to 400°F (200°C). Place the skewers on a lined baking sheet and bake for 20-25 minutes, turning halfway through, until the chicken reaches an internal temperature of 165°F (74°C).

6. Drizzle with Bang Bang Sauce

Once the chicken is fully cooked, remove the skewers from the grill or oven. Generously drizzle or brush the Bang Bang sauce over the chicken kebabs for that signature sweet and spicy flavor.

Marinate Longer: The longer you marinate the chicken, the more flavorful and tender it will be. If possible, marinate overnight.

  • Adjust Spice Levels: If you like it hotter, add more sriracha. For a milder version, reduce the amount of sriracha and increase the honey.
  • Cook Evenly: Make sure the chicken pieces are of similar size for even cooking.
