– 2 cups all-purpose flour
– 1/4 cup vegetable oil or ghee
– 1/2 teaspoon salt
– 1/2 cup water (or as needed)

– 2 medium potatoes, boiled, peeled, and diced

– 1 tablespoon vegetable oil
– 1 teaspoon cumin seeds
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 inch piece of ginger, minced
– 1-2 green chilies, finely chopped
– 1 teaspoon coriander powder
– 1/2 teaspoon cumin powder
– 1/2 teaspoon garam masala
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– Salt, to taste
– 2 tablespoons chopped fresh cilantro
Instructions:
1. Prepare the Dough:
– In a large mixing bowl, combine the flour and salt.
– Add the vegetable oil or ghee and mix it into the flour using your fingers until the mixture resembles coarse crumbs.
– Gradually add water, a little at a time, and knead the mixture into a firm dough.
– Cover the dough with a damp cloth and let it rest for 30 minutes.
2. Prepare the Filling:
– Heat the oil in a pan over medium heat.
– Add the cumin seeds and let them sizzle for a few seconds.
– Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onions are translucent.

– Divide the dough into equal-sized balls.
– Roll each ball into a thin oval or round shape on a lightly floured surface.
– Cut the rolled dough in half to form two semi-circles.
– Take one semi-circle and fold it into a cone shape, sealing the edge with a little water.
– Fill the cone with 1-2 tablespoons of the potato filling.
– Seal the open edge of the cone to form a triangle, pressing the edges firmly together. Repeat with the remaining dough and filling.
4. Air Fry the Samosas:
– Preheat your air fryer to 375°F (190°C) for about 5 minutes.
– Lightly brush or spray the samosas with oil.
– Place the samosas in a single layer in the air fryer basket, making sure they are not touching.
– Air fry the samosas at 375°F (190°C) for 15-20 minutes, turning them halfway through, until they are golden brown and crispy.
5. Serve:
– Remove the samosas from the air fryer and let them cool slightly.
