Air Fryer Smashed Potatoes

Ingredients:

  • 1 lb baby potatoes or small potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme (optional)
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or chives) for garnish

Instructions:

  1. Boil the Potatoes:
    • Place potatoes in a pot of salted water and bring to a boil. Cook for 10-15 minutes or until the potatoes are fork-tender. Drain and let cool slightly.
  2. Smash the Potatoes:
    • Preheat your air fryer to 400°F (200°C).
    • Place the cooked potatoes on a clean surface. Use the bottom of a glass or a potato masher to gently press down on each potato until it’s about 1/2 inch thick.
  3. Season the Potatoes:
    • Place the smashed potatoes in a bowl, drizzle with olive oil, and sprinkle with garlic powder, dried rosemary or thyme (if using), salt, and pepper. Toss gently to coat.
  4. Air Fry the Potatoes:
    • Arrange the potatoes in a single layer in the air fryer basket. (You may need to work in batches to avoid overcrowding.)
    • Air fry for 10-15 minutes, flipping halfway through, until the potatoes are golden and crispy.
  5. Serve:
    • Garnish with fresh herbs and serve hot. Enjoy these crispy, flavorful potatoes as a snack, appetizer, or side!
