Ingredients:
- 1 lb baby potatoes or small potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or thyme (optional)
- Salt and pepper, to taste
- Fresh herbs (like parsley or chives) for garnish
Instructions:
- Boil the Potatoes:
- Place potatoes in a pot of salted water and bring to a boil. Cook for 10-15 minutes or until the potatoes are fork-tender. Drain and let cool slightly.
- Smash the Potatoes:
- Preheat your air fryer to 400°F (200°C).
- Place the cooked potatoes on a clean surface. Use the bottom of a glass or a potato masher to gently press down on each potato until it’s about 1/2 inch thick.
- Season the Potatoes:
- Place the smashed potatoes in a bowl, drizzle with olive oil, and sprinkle with garlic powder, dried rosemary or thyme (if using), salt, and pepper. Toss gently to coat.
- Air Fry the Potatoes:
- Arrange the potatoes in a single layer in the air fryer basket. (You may need to work in batches to avoid overcrowding.)
- Air fry for 10-15 minutes, flipping halfway through, until the potatoes are golden and crispy.
- Serve:
