Ingredients:
– 1 cup polenta (coarse cornmeal)
– 4 cups water or vegetable broth
– 1/2 teaspoon salt
– 1/4 cup grated Parmesan cheese (optional for extra flavor)
– 1 tablespoon truffle oil
– 1 tablespoon olive oil (for brushing)
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Polenta:
– In a medium saucepan, bring water or vegetable broth to a boil.
– Gradually whisk in the polenta and salt.
– Reduce the heat to low and cook, stirring constantly, until the polenta thickens and pulls away from the sides of the pan, about 20-25 minutes.
– Stir in the grated Parmesan cheese (if using) and truffle oil.
2. Set the Polenta:
– Pour the cooked polenta into a parchment-lined baking dish, spreading it evenly to about 1/2-inch thickness.
– Let the polenta cool to room temperature, then refrigerate for at least 1 hour, or until firm.
3. Cut the Polenta:
– Once the polenta is firm, remove it from the refrigerator and cut it into fry-shaped sticks.
4. Preheat the Air Fryer:
– Preheat your air fryer to 400°F (200°C) for about 5 minutes.
5. Prepare the Fries:
– Lightly brush the polenta fries with olive oil on all sides.
– Season with salt and pepper to taste.
6. Air Fry the Polenta Fries:
– Arrange the polenta fries in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.
– Air fry the fries at 400°F (200°C) for 15-20 minutes, or until they are golden brown and crispy, turning them halfway through the cooking time.
7. Serve:
– Once cooked, transfer the polenta fries to a serving platter.
– Garnish with fresh parsley.
