Ingredients:
- 1 can Spam, cut into 8 slices
- 4 large eggs, scrambled
- 3 cups cooked sushi rice (short-grain rice)
- 2 tablespoons soy sauce
- 2 tablespoons BBQ sauce
- 1 tablespoon vegetable oil
- 4 sheets nori (seaweed), cut into strips
- Salt, to taste
- Sesame seeds (optional, for garnish)
- Furikake seasoning (optional, for garnish)
Instructions:
- Prepare the Spam:
- Heat the vegetable oil in a skillet over medium heat.
- Add the Spam slices and cook until they are crispy and browned on both sides, about 2-3 minutes per side.
- Remove the Spam from the skillet and set aside.
- Scramble the Eggs:
- In the same skillet, add the scrambled eggs and cook, stirring occasionally, until they are fully cooked and slightly fluffy. Remove from heat.
- Season the Rice:
- In a small bowl, mix the soy sauce and BBQ sauce.
- Add the cooked sushi rice to a large mixing bowl. Drizzle the sauce mixture over the rice and gently fold to combine. Add salt to taste.
- Assemble the Onigiri:
- Wet your hands with water to prevent the rice from sticking. Take a small handful of rice and flatten it into a patty in your palm.
- Place a slice of cooked Spam and a small amount of scrambled eggs in the center of the rice patty.
- Take another small handful of rice and place it on top of the Spam and eggs, pressing gently to form a ball or a triangle shape, encasing the filling inside.
- Wrap a strip of nori around the bottom of the onigiri, pressing gently to adhere.
- Garnish (Optional):
- Sprinkle the onigiri with sesame seeds and/or furikake seasoning if desired.
- Serve:
- Serve the BBQ Spam and Egg Onigiri warm or at room temperature. They can be wrapped in plastic wrap and stored in the refrigerator for up to a day.
