Ingredients:

  • 4 salmon fillets (6-8 oz each)
  • 1 cup beer (lager or light ale works well)
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro or parsley, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the Marinade:
    • In a medium bowl, whisk together the beer, fresh lime juice, olive oil, soy sauce, minced garlic, honey (or maple syrup), ground cumin, smoked paprika, salt, and black pepper until well combined.
  2. Marinate the Salmon:
    • Place the salmon fillets in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the salmon, ensuring each fillet is well coated.
    • Seal the bag or cover the dish with plastic wrap and refrigerate for at least 30 minutes, preferably 1-2 hours. Do not marinate for more than 4 hours as the acid from the lime juice can start to break down the salmon too much.
  3. Preheat the Grill or Oven:
    • If grilling, preheat your grill to medium-high heat and oil the grates to prevent sticking.
    • If using the oven, preheat it to 400°F (200°C).
  4. Grill or Bake the Salmon:
