Instructions:
1. Cook the Bacon:
– In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
2. Cook the Meat:
– Add the chopped onion to the pot with the bacon fat and sauté until translucent, about 5 minutes.
– Add the minced garlic and cook for another 1-2 minutes.
– Add the thinly sliced beef to the pot, season with ground cumin, black pepper, and salt. Cook until the meat is browned.
3. Simmer:
– Pour in the beef broth and water. Bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes, allowing the flavors to meld together.
4. Add Cilantro:
– Stir in the chopped fresh cilantro and let it simmer for another 5 minutes. Adjust seasoning if needed.
5. Serve:
– Ladle the meat and its juices into bowls. Top with cooked pinto beans, chopped cilantro, chopped onion, sliced radishes, and any additional toppings like tortilla chips or avocado slices.
– Serve with lime wedges on the side for squeezing over the top.
