Chicken Pecan Salad

Ingredients:

  • 2 cups cooked chicken breast, diced
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Chicken:
    • If not already done, cook and dice the chicken breast. You can poach, grill, or bake it according to your preference.
  2. Toast the Pecans:
    • In a dry skillet over medium heat, toast the chopped pecans until fragrant, about 2-3 minutes. Stir frequently to prevent burning. Remove from heat and let cool.
  3. Mix the Dressing:
    • In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
  4. Combine Ingredients:
    • In a large bowl, combine the diced chicken, toasted pecans, celery, and red onion.
  5. Add the Dressing:
    • Pour the dressing over the chicken mixture and toss until everything is well coated.
  6. Chill:
    • Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
