Ingredients:

  • 1 1/2 lbs (700g) cod fillets, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 large tomatoes, chopped
  • 1 can (14 oz) coconut milk
  • 1 cup fish or vegetable broth
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (optional, for heat)
  • 1 teaspoon mustard seeds
  • 10-12 curry leaves (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving
  • Steamed rice or naan bread, for serving

Instructions:

  1. Prepare the Aromatics:
    • In a large pot or deep skillet, heat the vegetable oil over medium heat.
    • Add the mustard seeds and let them sizzle until they start to pop.
    • Add the chopped onion and sauté until soft and translucent, about 5 minutes.
    • Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
    • If using, add the curry leaves and stir for a minute.
  2. Add the Spices:
    • Add the ground cumin, ground coriander, ground turmeric, garam masala, and chili powder (if using) to the pot.
    • Stir well to coat the onions, garlic, and ginger with the spices, cooking for 1-2 minutes until the spices are fragrant.
  3. Add the Tomatoes:
    • Add the chopped tomatoes to the pot and cook until they soften and break down, about 5-7 minutes.
  4. Add the Liquid:
    • Pour in the coconut milk and fish or vegetable broth, stirring to combine.
    • Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 10 minutes to allow the flavors to meld.
  5. Cook the Cod:
    • Gently add the cod pieces to the pot, making sure they are submerged in the curry sauce.
    • Cover and simmer for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. Season the Curry:
    • Season the curry with salt and pepper to taste.
  7. Serve:
    • Serve the Indian cod curry hot, garnished with fresh cilantro.
    • Offer lime wedges on the side for squeezing over the curry.
    • Accompany with steamed rice or naan bread.
