Ingredients:
- 6 large eggs
- 3 tbsp mayonnaise
- 1–2 tsp curry powder (adjust to taste)
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
- 2 tbsp green onions or chives, finely chopped (optional)
- 4 slices of Ezekiel bread (or your favorite bread)
- Butter or lettuce leaves (optional, for serving)
Instructions:
- Cook the Eggs:
- Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat to a simmer and cook for 10 minutes.
- Drain and transfer the eggs to a bowl of ice water to cool. Peel and chop the eggs into small pieces.
- Prepare the Curried Egg Mixture:
- In a medium bowl, combine the chopped eggs, mayonnaise, curry powder, Dijon mustard, salt, and pepper. Mix well until creamy.
- Fold in the green onions or chives if using.
- Assemble the Sandwiches:
- Spread a thin layer of butter on each slice of Ezekiel bread (optional). Spoon the curried egg mixture onto two slices, spreading it evenly. Top with another slice of bread or add lettuce if desired.
