These hot and spicy chicken nachos are a tasty and crowd-pleasing appetizer! Sautéed onion, tomatoes, corn, and jalapeños are combined with blackened chicken that has been seasoned with a fiery mixture of Cajun seasoning, garlic powder, chili powder, chile flakes, and hot sauce. For a melty, bubbly finish, cheese and salsa are melted over the entire shebang and grilled. The finest aspect? All you need to make these nachos is one skillet!

Ingredients:

For the blackened chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

For assembling the nachos:

  • 1 bag of tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped fresh cilantro
  • Sour cream and guacamole for serving

Instructions:

1. Prepare the blackened chicken:

  1. In a small bowl, mix together paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper to make the blackening seasoning.
  2. Rub the seasoning mixture evenly over both sides of the chicken breasts.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Once the skillet is hot, add the seasoned chicken breasts.
  5. Cook for 5-6 minutes on each side or until the chicken is cooked through and nicely blackened.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

2. Assemble the nachos:

  1. Preheat your oven to 350°F (175°C).
  2. Spread the tortilla chips in an even layer on a large baking sheet.
  3. Sprinkle half of the shredded cheddar cheese over the tortilla chips.
  4. Arrange the sliced blackened chicken evenly over the cheese-covered tortilla chips.
  5. Sprinkle the diced tomatoes, red onion, and jalapeños over the chicken.
  6. Top with the remaining shredded cheddar cheese.
  7. Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  8. Remove the nachos from the oven and garnish with chopped cilantro.
  9. Serve the nachos hot with sour cream and guacamole on the side.
