Detox Rainbow Roll-Ups with Peanut Sauce

Ingredients:

  1. Rice paper wraps
  2. Carrots, julienned
  3. Cucumber, julienned
  4. Red bell pepper, thinly sliced
  5. Purple cabbage, thinly sliced
  6. Avocado, sliced
  7. Fresh cilantro leaves
  8. Cooked rice noodles (optional)
  9. Sesame seeds (optional)
  10. Peanut Sauce:
  • ½ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • Water (as needed to thin the sauce)

Steps:

  1. Prepare all your ingredients by washing and slicing them as needed.
  2. Prepare the peanut sauce by whisking together peanut butter, soy sauce, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl. If the sauce is too thick, you can thin it out with water until you reach your desired consistency. Set aside.
  3. Fill a large shallow dish or bowl with warm water.
  4. Take one rice paper wrap and dip it into the warm water for about 10-15 seconds until it softens.
  5. Carefully remove the softened rice paper wrap from the water and lay it flat on a clean work surface.
  6. Arrange a small amount of each ingredient in the center of the rice paper wrap, leaving some space at the edges to fold.
  7. Start rolling the rice paper wrap tightly over the filling, folding in the sides as you go, similar to rolling a burrito.
  8. Repeat the process with the remaining rice paper wraps and filling ingredients.
  9. Once all the roll-ups are assembled, you can slice them in half diagonally for serving, if desired.
  10. Serve the Detox Rainbow Roll-Ups with the prepared peanut sauce on the side for dipping.
  11. Optionally, sprinkle sesame seeds on top for extra flavor and crunch.
