Eggs Benedict Breakfast Pizza

Ingredients:

For the Pizza Dough:
1 lb store-bought pizza dough (or homemade if you prefer)

For the Hollandaise Sauce:
-3 large egg yolks
1/2 cup unsalted butter, melted
1 tbsp lemon juice
1/2 tsp Dijon mustard
Pinch of salt
Pinch of cayenne pepper (optional)

For the Pizza Topping:
1 tbsp olive oil
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
6 slices Canadian bacon (or ham)
4 large eggs
2-3 green onions, chopped (optional, for garnish)
Fresh chives or parsley, chopped (optional, for garnish)
Salt and pepper, to taste

Instructions:

1. Prepare the Hollandaise Sauce:
In a heatproof bowl, whisk together the egg yolks and lemon juice.
Place the bowl over a pot of simmering water (double boiler method), making sure the bowl doesn’t touch the water.
Gradually whisk in the melted butter until the sauce thickens and becomes smooth. Stir in the Dijon mustard, salt, and cayenne pepper. Keep warm.

2. Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats.

3. Prepare the Pizza Dough:
Roll out the pizza dough on a lightly floured surface to your desired thickness. If using a pizza stone, transfer the rolled dough to a pizza peel or a baking sheet lined with parchment paper.

4. Assemble the Pizza:
Brush the pizza dough with olive oil. Sprinkle evenly with shredded mozzarella and cheddar cheese.  Arrange the Canadian bacon slices over the cheese.

5. Bake the Pizza:
Bake in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is bubbly and melted.

6. Cook the Eggs:
While the pizza is baking, poach the eggs. Bring a pot of water to a gentle simmer and add a splash of vinegar if desired.
Crack each egg into a small bowl, then gently slide into the simmering water. Cook for 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

7. Assemble the Pizza:
Once the pizza is out of the oven, carefully place the poached eggs on top. Drizzle with the warm Hollandaise sauce.

8. Garnish and Serve:
Sprinkle with chopped green onions, fresh chives, or parsley if desired. Season with a little salt and pepper to taste.
