Fereni Starch Pudding

Ingredients

  • 4 cups milk
  • 1/2 cup rice flour (or corn starch)
  • 1/3 cup sugar (adjust to taste)
  • 1-2 tbsp rosewater (or to taste)
  • 1/4 tsp ground cardamom (optional, for extra aroma)
  • Pistachios, slivered almonds, or cinnamon for garnish

Instructions

Step 1: Prepare the Milk Mixture

  1. In a medium saucepan, whisk the rice flour (or starch) with 1 cup of milk until smooth, making sure there are no lumps.
  2. Gradually add the remaining 3 cups of milk while stirring continuously.

Step 2: Cook the Pudding

  1. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken (about 10-15 minutes).
  2. Add the sugar and continue stirring. Cook for another 5-10 minutes, until the pudding has a thick, creamy consistency.

Step 3: Add Flavorings

  1. Once the pudding has thickened, remove it from the heat and stir in the rosewater and ground cardamom, if using.
  2. Mix well to incorporate the flavors.

Step 4: Serve

  1. Pour the Fereni into serving bowls or ramekins.
  2. Allow it to cool slightly, then chill in the refrigerator for at least an hour to set.

Step 5: Garnish and Enjoy

  1. Garnish with slivered pistachios, almonds, or a dusting of cinnamon just before serving.
