- 4 cups milk
- 1/2 cup rice flour (or corn starch)
- 1/3 cup sugar (adjust to taste)
- 1-2 tbsp rosewater (or to taste)
- 1/4 tsp ground cardamom (optional, for extra aroma)
- Pistachios, slivered almonds, or cinnamon for garnish
Instructions
Step 1: Prepare the Milk Mixture
- In a medium saucepan, whisk the rice flour (or starch) with 1 cup of milk until smooth, making sure there are no lumps.
- Gradually add the remaining 3 cups of milk while stirring continuously.
Step 2: Cook the Pudding
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken (about 10-15 minutes).
- Add the sugar and continue stirring. Cook for another 5-10 minutes, until the pudding has a thick, creamy consistency.
Step 3: Add Flavorings
- Once the pudding has thickened, remove it from the heat and stir in the rosewater and ground cardamom, if using.
- Mix well to incorporate the flavors.
Step 4: Serve
- Pour the Fereni into serving bowls or ramekins.
- Allow it to cool slightly, then chill in the refrigerator for at least an hour to set.
Step 5: Garnish and Enjoy
- Garnish with slivered pistachios, almonds, or a dusting of cinnamon just before serving.
