Ingredients:
1 can Goya Shredded Chicken (12.5 oz)
1 tablespoon olive oil
1 small onion, finely chopped
1 bell pepper, finely chopped (any color)
2 cloves garlic, minced
1 packet Goya Taco Seasoning Mix (or use your favorite seasoning blend)
1/2 cup chicken broth
8 small taco-sized tortillas
Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, avocado slices
Instructions:
1. Prepare the Chicken:
Open the can of Goya Shredded Chicken and drain off any excess liquid.
2. Cook the Vegetables:
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and bell pepper. Cook for about 5 minutes, or until the vegetables are softened.
Add the minced garlic and cook for another minute until fragrant.
3. Add the Chicken:
Stir in the shredded chicken and taco seasoning mix. Mix well to coat the chicken evenly with the seasoning.
4. Add Chicken Broth:
Pour in the chicken broth and stir to combine. Let the mixture simmer for 5-7 minutes, or until heated through and the flavors are well combined. The chicken should be moist but not too watery.
5. Warm the Tortillas:
While the chicken mixture is simmering, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and heat them in the oven.
6. Assemble the Tacos:
Spoon the shredded chicken mixture onto each tortilla.
Top with your favorite toppings like shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, or avocado slices.
7. Serve:
Serve the tacos warm and enjoy!
