Ingredients:
- 8 lamb loin chops (about 1 inch thick)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- Salt and freshly ground black pepper, to taste
- Lemon wedges (for serving)
Instructions:
- Marinate the Lamb:
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the lamb chops. Cover and let marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
- Prepare the Grill:
- Preheat the grill to medium-high heat (about 400°F / 200°C).
- Clean and lightly oil the grates to prevent sticking.
- Grill the Lamb Chops:
- Place the lamb chops on the hot grill. Grill for about 4-5 minutes per side for medium-rare, or until the internal temperature reaches 135°F (57°C).
- For medium, cook 6-7 minutes per side, or until the temperature is 145°F (63°C).
- Rest and Serve:
- Transfer the grilled chops to a plate and let them rest for 5 minutes to allow the juices to redistribute.
- Serve with a squeeze of lemon for extra brightness, along with your favorite sides.
