Grilled Lamb Loin Chops

Ingredients:

  • 8 lamb loin chops (about 1 inch thick)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges (for serving)

Instructions:

  1. Marinate the Lamb:
    • In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
    • Rub the mixture all over the lamb chops. Cover and let marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
  2. Prepare the Grill:
    • Preheat the grill to medium-high heat (about 400°F / 200°C).
    • Clean and lightly oil the grates to prevent sticking.
  3. Grill the Lamb Chops:
    • Place the lamb chops on the hot grill. Grill for about 4-5 minutes per side for medium-rare, or until the internal temperature reaches 135°F (57°C).
    • For medium, cook 6-7 minutes per side, or until the temperature is 145°F (63°C).
  4. Rest and Serve:
    • Transfer the grilled chops to a plate and let them rest for 5 minutes to allow the juices to redistribute.
    • Serve with a squeeze of lemon for extra brightness, along with your favorite sides.
