Grilled Swordfish

Ingredients:

  • 4 swordfish steaks (about 1 inch thick)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Prepare the Marinade:
    • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped thyme, and chopped rosemary.
    • Season the marinade with salt and pepper to taste.
  2. Marinate the Swordfish:
    • Place the swordfish steaks in a shallow dish or a resealable plastic bag.
    • Pour the marinade over the swordfish, making sure each steak is well coated.
    • Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 400°F/200°C).
    • Lightly oil the grill grates to prevent sticking.
  4. Grill the Swordfish:
    • Remove the swordfish steaks from the marinade and shake off any excess.
    • Place the swordfish steaks on the preheated grill.
    • Grill for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Serve:
    • Transfer the grilled swordfish to a serving platter.
    • Garnish with lemon wedges for squeezing over the fish.
    • Serve immediately.
