Instructions:
1. Prepare the Sugar Syrup:
– In a saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
– Add cardamom powder and saffron strands (if using).
– Simmer for 5-7 minutes until the syrup slightly thickens.
– Remove from heat and add a few drops of rose water or kewra water for fragrance (if using). Set aside.
2. Make the Waffle Balls:
– In a mixing bowl, combine milk powder, all-purpose flour, and baking powder.
– Add ghee or melted butter and mix well using your fingertips until the mixture resembles bread crumbs.
– Gradually add milk, a little at a time, and knead into a smooth and soft dough. The dough should be soft but not sticky.
– Divide the dough into small portions and roll into smooth balls, about 1 inch in diameter.
3. Fry the Waffle Balls:
– Heat oil or ghee in a deep frying pan over medium-low heat.
– Once the oil is hot, reduce the heat to low.
– Carefully add the prepared waffle balls in batches and fry on low heat until they are golden brown and evenly cooked through. Stir gently to ensure even frying.
– Remove the fried waffle balls using a slotted spoon and drain on paper towels to remove excess oil.
4. Soak in Sugar Syrup:
– While the waffle balls are still warm, gently immerse them in the warm sugar syrup.
– Let the waffle balls soak in the syrup for at least 1-2 hours, allowing them to absorb the flavors.
5. Serve:
– Serve Gulab Jamun or Kala Jamun waffle balls warm or at room temperature.
