Haydari (Turkish Yogurt Dip)

Ingredients:
– 2 cups thick Greek yogurt or strained plain yogurt
– 1/4 cup crumbled feta cheese
– 2 cloves garlic, minced
– 2 tablespoons fresh dill, finely chopped
– 2 tablespoons fresh mint, finely chopped
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– 1/2 teaspoon salt (adjust to taste)
– 1/4 teaspoon black pepper
– 1/2 teaspoon dried mint (optional, for garnish)
– 1/2 teaspoon red pepper flakes (optional, for garnish)

Instructions:

1. Prepare the Yogurt:
– If using plain yogurt, strain it through a cheesecloth or fine sieve for a few hours to remove excess liquid and achieve a thick consistency similar to Greek yogurt.

2. Combine Ingredients:
– In a medium mixing bowl, combine the thick Greek yogurt or strained yogurt with the crumbled feta cheese. Mix well.

3. Add Flavorings:
– Stir in the minced garlic, fresh dill, fresh mint, olive oil, lemon juice, salt, and black pepper. Mix until all ingredients are well incorporated.

4. Adjust Seasoning:
– Taste the dip and adjust the seasoning as needed, adding more salt, lemon juice, or herbs to suit your preference.

5. Chill:
– Cover the bowl and refrigerate the dip for at least 1 hour to allow the flavors to meld together.

6. Serve:
– Transfer the Haydari to a serving dish. If desired, sprinkle the top with dried mint and red pepper flakes for added flavor and presentation.

7. Garnish and Enjoy:
– Drizzle with a bit of extra olive oil before serving. Serve with fresh bread, pita, or vegetable sticks.
