Ingredients:
– 1 pound ground pork
– 2 tablespoons apple cider vinegar

– 1/2 teaspoon ground cinnamon
– 1/2 teaspoon ground cloves
– 1/2 teaspoon ground black pepper
– 1/2 teaspoon salt
– 1/2 teaspoon cayenne pepper (optional, for extra heat)
Instructions:
1. Prepare the Seasoning:
– In a small bowl, combine the minced garlic, chili powder, paprika, ground cumin, dried oregano, ground coriander, ground cinnamon, ground cloves, ground black pepper, salt, and cayenne pepper (if using). Mix well to combine all the spices.
2. Mix the Meat:
– In a large bowl, add the ground pork and sprinkle the spice mixture evenly over the at. Add the apple cider vinegar.
3. Combine:
– Using your hands or a large spoon, mix the ground pork with the spices and vinegar until everything is thoroughly combined. Make sure the seasoning is evenly distributed throughout the meat.
4. Marinate:
– Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight. This allows the flavors to meld and develop.
5. Cook the Chorizo:
– To cook the chorizo, heat a skillet over medium-high heat. Add the chorizo mixture and cook, breaking it up with a spoon, until it is browned and cooked through, about 8-10 minutes.
6. Serve:
– Use the homemade Mexican chorizo in tacos, burritos, quesadillas, scrambled eggs, or any other dishes where you would use chorizo.
