Iskender Kebab

Ingredients

For the Meat:

  • 1 lb lamb or beef (or chicken), thinly sliced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika (smoked or sweet)

For the Tomato Sauce:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato puree
  • 1/2 cup water
  • 1 tsp sugar
  • Salt and pepper, to taste

For Serving:

  • 4 pita breads, cut into pieces
  • 1 cup plain yogurt
  • 1/4 cup melted butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Marinate the Meat
    In a bowl, combine the sliced meat with olive oil, salt, black pepper, cumin, and paprika. Let it marinate for at least 15 minutes (or longer for deeper flavor).
  2. Prepare the Tomato Sauce
    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent (about 5 minutes). Add the minced garlic and cook for an additional minute. Stir in the tomato puree, water, sugar, salt, and pepper. Simmer for about 10-15 minutes, allowing the sauce to thicken slightly.
  3. Cook the Meat
    In a large skillet over medium-high heat, add the marinated meat. Cook until browned and cooked through, about 6-8 minutes. If using pre-cooked doner meat, just heat it until warmed.
  4. Prepare the Pita Base
    Lightly toast the pita bread pieces in the oven or a pan until warm and slightly crispy. Arrange the pita pieces on a serving platter.
  5. Assemble the Dish
    Place the cooked meat on top of the pita pieces. Pour the warm tomato sauce evenly over the meat and pita.
  6. Add Yogurt and Butter
    Dollop yogurt over the top of the dish. Drizzle melted butter over everything for extra richness.
  7. Garnish and Serve
    Sprinkle with fresh parsley for garnish. Serve immediately, preferably with grilled vegetables or a side salad.
