Lazy Wonton Soup

Ingredients:

– For the Broth:
– 8 cups chicken or vegetable broth
– 3 cloves garlic, minced
– 1-inch piece fresh ginger, peeled and sliced
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon sesame oil

– For the Wontons:
– 1 pound ground pork or chicken
– 1/4 cup finely chopped scallions
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon minced garlic
– 1 teaspoon minced ginger
– 1/4 teaspoon white pepper
– 30-40 wonton wrappers

– For the Soup:
– 2 cups baby spinach or bok choy, chopped
– 1 cup sliced mushrooms
– 1 cup shredded carrots
– 1/4 cup chopped scallions (for garnish)

Instructions:

1. Prepare the Broth:
– In a large pot, combine the chicken or vegetable broth, minced garlic, sliced ginger, soy sauce, rice vinegar, and sesame oil.
– Bring to a simmer over medium heat and let it cook for about 10 minutes to allow the flavors to meld.
– Remove the ginger slices before adding the wontons.

2. Prepare the Wonton Filling:
– In a medium bowl, combine the ground pork or chicken, chopped scallions, soy sauce, sesame oil, minced garlic, minced ginger, and white pepper.
– Mix until well combined.

3. Assemble the Wontons:
– Place a wonton wrapper on a clean surface.
– Spoon about 1 teaspoon of the filling onto the center of the wrapper.
– Moisten the edges of the wrapper with water.
– Fold the wrapper in half to form a triangle, pressing the edges to seal.
– Bring the two corners of the triangle together and seal with a little water to form a wonton shape.
– Repeat with the remaining wrappers and filling.

4. Cook the Wontons:
– Gently add the wontons to the simmering broth.
– Let them cook for about 4-5 minutes, or until the wontons are cooked through and float to the surface.

5. Prepare the Soup:
– Add the baby spinach or bok choy, sliced mushrooms, and shredded carrots to the broth.
– Let the vegetables cook for an additional 2-3 minutes, until tender.

6. Serve:
– Ladle the soup into bowls, ensuring each serving has a good amount of broth, vegetables, and wontons.
– Garnish with chopped scallions.
