Malaysian Barbecue Chicken Wings

Ingredients:

2 lbs chicken wings
3 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons honey
2 tablespoons chili sauce (adjust to taste)
1 tablespoon fish sauce
1 tablespoon sesame oil
3 cloves garlic, minced
1-inch piece of ginger, grated
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground black pepper
1 teaspoon salt
2 green onions, chopped (for garnish)
Sesame seeds (for garnish)

Instructions:

1. Prepare Marinade:
– In a large bowl, mix together the soy sauce, oyster sauce, hoisin sauce, honey, chili sauce, fish sauce, sesame oil, minced garlic, grated ginger, ground turmeric, ground coriander, ground cumin, ground black pepper, and salt.

2. Marinate Chicken:
– Add the chicken wings to the marinade, making sure each wing is well coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.

3. Preheat Grill:
– Preheat your grill to medium-high heat.

4. Grill Chicken Wings:
– Remove the chicken wings from the marinade, shaking off any excess. Reserve the marinade for basting.
– Grill the chicken wings for about 20-25 minutes, turning occasionally and basting with the reserved marinade, until the wings are cooked through and nicely charred on the outside.

5. Garnish and Serve:
– Transfer the grilled wings to a serving platter.
– Garnish with chopped green onions and sesame seeds.
