Old-Fashioned Potato Cakes

Ingredients:
2 cups mashed potatoes (about 2 large potatoes, peeled and boiled)
1/2 cup all-purpose flour
1 large egg
1/4 cup finely chopped onion (optional)
1/4 cup chopped fresh parsley or chives (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon baking powder (optional, for fluffier cakes)
2-3 tablespoons vegetable oil or butter for frying

Instructions:

1. Prepare the Potatoes:
If you don’t already have mashed potatoes, peel and chop 2 large potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash until smooth.

2. Mix Ingredients:
In a large bowl, combine the mashed potatoes with the flour, egg, salt, pepper, and optional ingredients like onion, parsley, or chives. Mix until well combined. If using, add the baking powder to make the cakes a bit fluffier.

3. Form the Cakes:
Scoop a heaping tablespoon of the potato mixture and shape it into a patty or cake. Flatten it slightly with your fingers. Repeat with the remaining mixture.

4. Heat the Oil:
Heat 2-3 tablespoons of vegetable oil or butter in a large skillet over medium heat.

5. Fry the Cakes:
Place the potato cakes in the skillet, being careful not to overcrowd them. Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

6. Drain and Serve:
Remove the cakes from the skillet and drain on paper towels. Serve hot.
