Ingredients:
– 1 cup walnuts, finely chopped
– 1 cup powdered sugar
– 2 large egg whites
– 1 tsp vanilla extract
– 1/4 tsp salt
– 1/4 tsp cream of tartar
– 1/2 cup all-purpose flour
– 1/4 cup rosewater (optional, for a fragrant touch)
– Powdered sugar, for dusting

Instructions:

1. Prepare the Oven:
– Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Chop the Walnuts:
– Finely chop the walnuts and set them aside. You can use a food processor for finer consistency.

3. Beat the Egg Whites:
– In a large mixing bowl, add the egg whites, salt, and cream of tartar. Using an electric mixer, beat on medium speed until soft peaks form.

4. Add Sugar and Vanilla:
– Gradually add the powdered sugar, a little at a time, while continuing to beat the egg whites. Add the vanilla extract and rosewater (if using). Beat until stiff peaks form.

5. Fold in Walnuts and Flour:
– Gently fold in the chopped walnuts and flour into the egg white mixture. Mix until just combined.

6. Shape the Puffs:
– Using a spoon or a piping bag, drop small mounds of the mixture onto the prepared baking sheet. Leave some space between each mound to allow for spreading.

7. Bake:
– Bake in the preheated oven for 12-15 minutes, or until the puffs are lightly golden and set.

8. Cool and Dust:
– Remove the puffs from the oven and allow them to cool completely on a wire rack. Once cooled, dust with powdered sugar for a finishing touch.

9. Serve:
– Serve the Pofaki Gerdooyi with tea or as a delightful sweet treat.
