**For Assembling Bun Kabab:**

#### Instructions:
1. **Cook the Chana Dal:**
– In a large pot, add the soaked split Bengal gram (chana dal) with enough water to cover. Bring to a boil, then reduce the heat and simmer until the dal is tender. Drain any excess water and set aside.
2. **Prepare the Spices:**
– In a small pan, dry roast the cumin seeds, coriander seeds, black cardamom, cloves, and cinnamon stick until fragrant. Grind to a fine powder using a spice grinder or mortar and pestle.
3. **Make the Kabab Mixture:**
– In a food processor, combine the cooked chana dal, minced beef or mutton, chopped onion, green chilies, ginger-garlic paste, ground spices, turmeric powder, red chili powder, garam masala powder, salt, chopped cilantro, and mint leaves. Blend until you get a smooth and well-combined mixture.
4. **Form Kababs:**
– Take portions of the mixture and shape them into round patties or oval-shaped kababs. Make sure they are compact and hold their shape well.
5. **Cook the Kababs:**
– Heat oil in a large skillet or frying pan over medium heat.
– Beat the eggs in a shallow bowl. Dip each kabab into the beaten eggs, coating all sides evenly.
– Shallow fry the kababs in the hot oil until they are golden brown and cooked through, flipping them gently to ensure even cooking on both sides. This should take about 4-5 minutes per side.
6. **Assemble Bun Kabab:**
– Slice the burger buns or pav in half. Lightly toast them with butter or spread with mayonnaise.
– Place a lettuce leaf on the bottom half of each bun.
– Add a shami kabab on top of the lettuce.
– Top with sliced onions and tomatoes.
– Spread ketchup or chutney on the top half of the bun and place it over the kabab.
7. **Serve:**
– Serve the shami kabab bun with additional ketchup or chutney on the side.
