3. Knead the Dough:
– Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.
4. Let it Rise:
– Place the dough back into the mixing bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
5. Shape the Vetkoek:
– Punch down the dough and divide it into 12 equal-sized pieces. Roll each piece into a ball and flatten slightly into a round shape, about 1/2 inch (1.25 cm) thick.
6. Fry the Vetkoek:
– In a large, deep skillet or pot, heat vegetable oil over medium heat until hot (about 350°F or 180°C). You want enough oil to fully submerge the vetkoek.
– Carefully place a few pieces of vetkoek into the hot oil, frying in batches to avoid overcrowding. Fry each side for 2-3 minutes or until golden brown and puffed up.
– Remove the vetkoek from the oil using a slotted spoon and drain on paper towels. Repeat with the remaining pieces.
