Sweet Sticky Rice with Mangoes

Ingredients:

1 cup glutinous rice (also known as sticky rice or sweet rice)
1 1/2 cups water
1 cup coconut milk
1/2 cup sugar
1/2 teaspoon salt
2 ripe mangoes, peeled and sliced
1 tablespoon toasted sesame seeds (optional)
Fresh mint leaves for garnish (optional)

Instructions:

1. Prepare the Sticky Rice:
– Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in 1 1/2 cups of water for at least 30 minutes, or up to 4 hours.

2. Cook the Rice:
– After soaking, do not drain the rice. Transfer the rice and soaking water to a saucepan. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the water is absorbed and the rice is tender.

3. Make the Coconut Sauce:
– While the rice is cooking, combine the coconut milk, sugar, and salt in a small saucepan. Cook over low heat, stirring frequently, until the sugar is dissolved and the mixture is hot but not boiling. Remove from heat.

4. Combine the Rice and Coconut Sauce:
– Once the rice is cooked, transfer it to a large bowl. Pour about 3/4 of the coconut sauce over the rice and stir to combine. Let the rice sit for about 10-15 minutes to absorb the coconut sauce.

5. Prepare the Mangoes:
– While the rice is absorbing the coconut sauce, peel and slice the mangoes into thin slices.

6. Serve:
– To serve, place a portion of the sticky rice on a serving plate. Arrange the mango slices alongside the rice. Drizzle the remaining coconut sauce over the rice and mangoes. Sprinkle with toasted sesame seeds and garnish with fresh mint leaves, if desired.
