Tres Leches (Milk Cake)

Ingredients:
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil, divided
1 medium red bell pepper, sliced
1 medium yellow bell pepper, sliced
1 medium zucchini, sliced
1 cup cherry tomatoes, halved
3 cloves garlic, minced
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper to taste
1/4 cup white wine (optional, can substitute with chicken broth)
1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)
3-4 ounces goat cheese, crumbled
1 tablespoon lemon juice
8 ounces pasta (such as penne or linguine), cooked according to package instructions

Instructions:

1. Cook the Pasta:
Cook the pasta according to the package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.

2. Prepare the Shrimp:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

3. Cook the Vegetables:
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, zucchini, and cherry tomatoes. Cook for about 5-7 minutes, or until the vegetables are tender but still crisp.

4. Add Garlic and Seasonings:
Add the minced garlic, dried basil, and oregano to the skillet. Cook for about 1 minute until fragrant.

5. Deglaze the Pan:
If using, pour in the white wine (or chicken broth) and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.

6. Combine Everything:
Return the cooked shrimp to the skillet. Add the cooked pasta and toss to combine. If the mixture seems dry, add a bit of the reserved pasta water to reach your desired consistency.

7. Add Goat Cheese and Fresh Basil:
Stir in the crumbled goat cheese until it starts to melt and coat the pasta and vegetables. Add the chopped fresh basil and lemon juice. Taste and adjust seasoning with more salt and pepper if needed.

8. Serve:
Serve the Shrimp Primavera hot, garnished with additional fresh basil if desired.
